Buffalo Chicken Salad (whole30/paleo)

INGREDIENTS

  • 1 lb chicken, cooked and diced

  • 1 head of lettuce, chopped

  • 3 celery stalks, diced

  • 1 medium carrot, thinly sliced

  • 1 medium red onion, diced

  • compliant ranch

    SAUCE

  • 1/3 cup ghee

  • 1/2 cup Franks hot sauce

  • 1 tbsp apple cider vinegar

  • 1/2 tsp paprika

  • 1 tsp cayenne pepper (add more for spice)

DIRECTIONS

  1. Combine all sauce ingredients and toss diced chicken in it.

  2. Place lettuce, celery, red onion and carrots on a plate and top with buffalo chicken.

  3. Drizzle with a compliant ranch.
