Chickpea Rice Caprese Salad (vegan/gluten-free)

INGREDIENTS

  • 1 cup chickpea rice

  • 3/4 cup grape tomatoes, cut in half

  • 3/4 cup diced cucumbers

  • handful of greens (I like arugula)

  • half red onion, diced

  • 1 tbsp EVOO

  • 4 tbsp balsamic vinegar

  • DF mozzarella, to top

  • salt/pepper, to taste

    DIRECTIONS

    1. Cook rice according to package directions, let it cool.

2. Combine all ingredients and add rice.

3. Refrigerate till chilled.
