Breakfast Burrito Bake (paleo/whole30)

INGREDIENTS

  • 1/2 cup diced peppers

  • 1 cup diced potatoes

  • 1 small onion, diced

  • 8 eggs

  • 1 chorizo link (1/4 lb), crumbled

  • 3/4 cup almond milk

  • 1 tsp smoked paprika

  • 1 tsp cumin

  • salt/pepper to taste

DIRECTIONS

  1. Pre-heat the oven to 350F.

  2. In a pan on medium/high heat, saute onion and peppers till brown. Set aside in a large bowl.

  3. Brown diced potatoes till crispy, about 4-6 mins. Set aside in the same bowl.

  4. Add crumbled chorizo to pan to brown till cooked, about 5 mins. Also set aside in bowl.

  5. Crack and whisk 8 eggs into a separate bowl. Add milk and seasonings.

  6. Pour egg mixture into the bowl with veggies. Stir to combine.

  7. In a greased casserole dish, pour in mixture. Place in oven for 40 mins.

  8. Serve with hot sauce or salsa!
