Pork Belly Cauliflower Fried Rice (whole30/paleo)

INGREDIENTS

  • 12 oz Pork Belly (fully cooked from @traderjoes)

  • 4 cups frozen cauliflower rice

  • 2 cups frozen peas and carrots

  • 4 eggs, whisked

  • 1/2 cup coconut aminos

  • 4 tsp sesame oil

  • White Pepper & Salt, to taste

DIRECTIONS

  1. Remove pork belly from packaging and rinse under water to remove salt.

  2. Dice pork belly up into bite sized cubes.

  3. Heat a pan on medium/high heat. Feel free to add a little oil and add the diced pork belly. There’ll be plenty of oil from the pork as it cooks. Season with a pinch of white pepper. Cook till browned and crispy, about 8-10 mins, then set aside.

    TIP: Keep the leftover fat from the pork to use at a later time.

  4. Heat the sesame oil in pan on medium/low and add the frozen cauliflower and veggies. Let it cook till softened, about 3-5 mins.

  5. Make a hole in the center of the pan and add whisked eggs. Scramble in the pan with the rice and veggies.

  6. Reduce heat to low and add coconut aminos and season with salt/white pepper. Add the pork back in and combine.

  7. Serve with sesame seeds and green onions.
