Chicken Popper Cups (paleo/whole30)

COOKING: 1 HOUR

INGREDIENTS

  • 2 cups shredded chicken

  • 2tbs compliant mayonnaise (I use @chosenfoods )

  • 2 tbs canned diced roasted jalapeños

  • bunch of chard

  • 1 medium red onion, thinly sliced

  • 2 tbs sweetener (I use date nectar @dvashorganics OMIT if Whole30)

DIRECTIONS

  1. Heat up a medium sized pan on low heat with oil. Once hot, add onions and sweetener. Mix around every few minutes, let it cook for 45 mins.

  2. Combine shredded chicken, mayo and jalapeños together.

  3. Lay chard out and top with chicken mixture, top with caramelized onions and fresh herbs (I used green onions).
